I've been craving for tiramisu for ages! I'd been meaning to pop out and buy a slice of tiramisu, but every time I'm out, it's always at a place that either doesn't serve tiramisu, or serves tiramisu that doesn't appeal to me. I then decided I'd make my own (about two months from when I began craving it).
In this recipe, mascarpone cheese has been replace with non-fat cream cheese, because I just couldn't use such fattening cheese! At the same time, the cocoa powder could be substituted for chocolate whey protein powder, of which I did.
Ingredients:
1 fresh long black
1 small pinch of stevia (or a little brown sugar) (Optional)
.25 cups sugar
.25 cups whipping cream
1 tub (8-ounce) non-fat cream cheese, softened
.25 cups low-fat milk
.5 teaspoons vanilla extract
14 sponge-type ladyfingers (were used in the photo, but use as much as needed)
1 tablespoon whey protein powder
Instructions:
In small bowl, stir stevia (or sugar) into long black until dissolved.
In large bowl, with mixer on medium-high speed, beat cream cheese and 1/4 cup sugar until fluffy, about 4 minutes. Continue beating; add milk and vanilla in slow, steady stream. Beat until well mixed and fluffy, about 2 minutes.
In medium bowl, with mixer on medium speed, beat cream until soft peaks form when beaters are lifted.
With spatula, gently fold whipped cream into cream cheese mixture.
Dip half of ladyfingers into long black, and arrange in single layer in baking dish. Spread half of cream cheese mixture evenly over ladyfingers. Top with remaining ladyfingers (dipped in long black). Spread evenly with remaining cream cheese mixture.
Sprinkle whey protein powder on top. Cover with plastic wrap and refrigerate for at least 4 hours, but preferably overnight.
